We are catering a tea for 80. Using loose tea and brewing three varieties, Oolong, Green and Decaf. We are using three water urns for each. Using tea socks, we will prepare the tea a couple of hours before. I was told to do it this way by a professional. However, I feel uncomfortable because I’m brewing in metal and the tea is sitting in the metal with warmer on...comments appreciated.

A comment to Bernie's June 11th 2009 post

I hope the urn you are using is strictly used for heating water or tea. You don't want to use a device that has held coffee or other strong flavors that will affect the taste of your brewed tea.

Next time definitely take the plunge and use loose leaf tea. Special tea sacks are sold of varying sized that will have enough room to allow the leaves to expand. You can even purchase brand new white panty hose (I wash and rinse them well) and make you own very long bag to allow the loose leaves plenty of room to open and release their flavor.

The above article offered excellent tea information.

Hi there! This site is really great! I'm too am hostessing a tea (for missions) at my church June 20, 2009. I couldn't image brewing loose tea b/c of the lack of help (there are only 3 of us!!!) I'm going to use the British Blend round tea bags which I've found to be the best in a bag b/c the flavor is rich and stronger than the other brands. I'll bring 1 large urn (an 80 cupper) of hot water to the proper temperature, brew the tea bags for the right amount of time, then take them out. We will fill the tea pots periodically as needed. I will be passing out Mighty Leaf as a party favor with a scripture verse on it (to introduce them to better tea!). At my next tea-I will DEFINATELY serve loose T. I need to begin using it at home first and get the art and science of it down!!! Thank you so much for the help and pictures of the table setting! Very lovely!

Lisa, did you get an answer to your question? Our class is having a tea in 2 weeks, for around 20 people, and I wondered the same thing. Did your way work?
Thanks!
